In my humble opinion, this is the best scalloped potatoes recipe out there. It’s simple, flavorful, and absolutely indulgent — yet made with ingredients you probably already have in your kitchen.

Ingredients

This recipe serves 4–6 people as a side dish.

  • 4 cups thinly sliced potatoes (Yukon Gold or Russet work best)

  • 3 tablespoons butter

  • 3 tablespoons all-purpose flour

  • 1½ cups milk (whole milk preferred for richness)

  • 1 teaspoon salt

  • ½ cup sliced green onion (or chopped white onion for a bolder flavor)

  • Black pepper, to taste

  • Optional: ½ cup shredded cheese (cheddar, Gruyère, or mozzarella), paprika for topping

Instructions

1. Prep the Potatoes

Peel and thinly slice the potatoes into ⅛-inch rounds. You can use a mandoline slicer or a sharp knife. Uniform slices ensure even cooking and beautiful layers.

2. Make the Roux (Cream Sauce Base)

In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes, stirring constantly. This forms a roux that will thicken your sauce.

Gradually add the milk, whisking continuously to avoid lumps. Add salt and stir until the sauce thickens — about 3–5 minutes. Remove from heat.

3. Assemble the Dish

Preheat your oven to 350°F (175°C).

Grease a baking dish (about 9×9 inches or similar size). Arrange half of the sliced potatoes in an even layer. Sprinkle with green onions and a little black pepper.

Pour half the sauce over the potatoes.

Repeat with the remaining potatoes and pour the rest of the sauce over the top. Spread evenly with a spatula.

4. Bake to Golden Perfection

Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 25–30 minutes, or until the top is golden brown and the potatoes are tender when pierced with a knife.

Let it sit for 5–10 minutes before serving — this helps the sauce thicken and settle into the layers.
