Ingredients

Main Casserole

Instructions

1. Preheat & Prep

Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set it aside.

2. Cook the Meat

In a skillet over medium-high heat, brown the ground beef with the diced onion, breaking it up as it cooks. Once browned and the onions are soft, drain excess grease.

3. Season the Filling

Add the taco seasoning to the beef and stir for a minute to toast the spices. Then stir in the salsablack beans, and corn. Cook until heated through.

Turn off the heat, then stir in the sour cream until creamy and well-blended.

4. Layer the Casserole

In your prepared baking dish, start layering:

  • Bottom layer: ⅓ of the crushed Doritos

  • Middle layer: ½ of the beef mixture

  • Cheese: ⅓ of the shredded cheese

  • Repeat: Add another ⅓ Doritos, remaining beef, another ⅓ cheese

  • Top layer: Final ⅓ Doritos and the rest of the cheese

5. Bake

Cover tightly with foil and bake for 30 minutes.
Remove foil and bake for another 15 minutes, until the cheese is bubbly and golden.
